摘要
本试验以玉米为原料,利用压热法来制备抗性淀粉。探讨了淀粉乳浓度、压热温度、压热时间及冷藏温度对抗性淀粉得率的影响。通过单因素及正交试验得出了最佳制备参数为:淀粉乳浓度23%,压热温度120℃,压热时间25min,冷藏温度3℃。在此制备条件下,抗性淀粉得率为15.49%。
To determine the optimum condition during the producing resistant starch by autoclave method,corn starch was chosen for the raw material in the experiment.The starch concentration, autoclave temperature,autoclave time and refrigerated temperature have been discussed and the application of resistant starch in thepasta have been studied. Through the orthogonal test,the best preparation parameters are starch concentration23%,autoclave temperature 120℃,autoclave time 25min, refrigerated temperature 3℃.In this condition,the rateof resistant starch is 15.49%.
