摘要
为探明江西烤烟主要理化指标感官评吸质量的相关性,采用典型相关分析方法,研究烤烟化学成分、物理特性、外观质量对感官评吸质量的影响。结果表明:江西烤烟叶片中的总氮、蛋白质、厚度、叶面密度对感官评吸质量指标中的烟气浓度存在显著影响,与其呈正相关关系;总氮、烟碱、蛋白质、叶片颜色及身份对香气量存在显著影响,与其呈正相关关系;氯、淀粉对烟气余味存在显著影响,与其呈负相关关系;成熟度、油分、色度是对香气质的存在显著影响,与其呈正相关关系。
The effect of chemical components,physical property and appearance quality on smoking quality of flue cured tobacco was studied by using the canonical correlation analysis to explore the correlations between main physical and chemical indexes and smoking quality of flue cured tobacco in Jiangxi Province.Results:Total nitrogen and protein content of tobacco leaves,leaf thickness and leaf surface density have a significant influence on smoke concentration of sensory smoking quality and there are the positive correlations.Leaf total nitrogen,nicotine and protein content,leaf color and leaf thickness have a significant influence on aroma quantity and there are the positive correlations.Chlorine and starch both have a significant influence on smoke aftertaste and there are the negative correlations.Maturity degree,oil content and chroma have a significant influence on aroma quality and there is the positive correlation.
