摘要
发酵过程杂菌污染的防治是一个综合治理的问题,方法主要有物理防治方法和化学防治法。本实验采用生产现场的预发酵醪为原料,在同一条件下分别加入3种不同抑菌剂,完成酒精发酵过程,通过检测分析,获得更适合发酵的抑菌剂,实现更高的产酒率。
Prevention and control of the fermentation process of bacterial contamination is a comprehensive treatment of the issue.Methods mainly include physical control and chemical control method.This experiment adopts the production site pre fermented mash as raw material,3 kinds of antibacterial agents were added in the same conditions,complete the alcohol fermentation process.Through the analysis,to obtain antibacterial agent is more suitable for fermentation,achieve higher alcohol production rate
