低聚异麦芽糖对乳酸杆菌增殖及产酸效果的研究 被引量:2

摘要 试验以乳酸杆菌为研究对象,旨在考察低聚异麦芽糖(IMO)对其增殖及代谢产物pH的影响。试验按照单因子设计随机分为3个处理,每个处理3个重复,对照组为不添加葡萄糖的MRS培养基;1.0%低聚异麦芽糖(IMO)组添加1.0%低聚异麦芽糖的MRS培养基;2.0%IMO组添加2.0%IMO的MRS培养基。分别测定0h、8h、16h、24h、36h和40h时各处理培养基的OD值和pH。结果表明:(1)除0h和8h外,IMO组培养液的OD值和pH均显著优于对照组(P<0.05);(2)2.0%IMO培养液的OD值和pH不但显著优于对照组(P<0.05),且明显好于1.0%IMO组(P<0.05)。研究结果提示,IMO对乳酸杆菌增殖有一定促进作用,并可显著降低发酵液的pH,2%的添加量的效果优于1%。 This study was to investigate the effects of Isomaltooligosaccharides(IMO)on the proliferation and PH value of metabolite of Lactobacillus.The Lactobacillus strain was cultured in three different MRS mediums with 3 replicates in single factorial arrangement.Namely,(1)control group:MRS medium without glucose;(2)1.0%Isomaltooligosaccharides(IMO)group:MRS medium with 1.0%IMO;(3)2.0%Isomaltooligosaccharides(IMO)group:MRS medium with 2.0%IMO.The OD630 and pH value of medium in each group were determined at 0,8,16,24,36 and 40h.The results showed as follows:(1)Except 0 h and 8h,IMO group of medium OD and pH were significantly better than the control group(P<0.05);(2)The medium of 2.0%IMO OD and pH not only distinctly better than the control group(P<0.05),but evidently better than 1.0%IMO group(P<0.05).It's concluded that:IMO has a certain effect on the proliferation of Lactobacillus,and can significantly reduce the pH of the fermentation broth,and the effect of adding 2%is better than 1%.
