黑斑原肌肉营养成分与品质评价 被引量:9

Analysis and Evaluation of Nutritional Components in Muscle of Glyptosternum maculatum

摘要 为探究黑斑原肌肉营养成分,合理开发和保护利用黑斑原种质资源,对采自雅鲁藏布江上游流域的7尾黑斑原进行营养物质测定及氨基酸分析,分析其肌肉营养品质,并对其营养品质进行评价。结果表明,黑斑原肌肉(鲜质量)中水分、粗蛋白、粗脂肪和粗灰分的含量分别为77.92%、17.64%、1.42%和0.29%。黑斑原肌肉中17种氨基酸的总含量为661.6mg/g(干质量),其中必需氨基酸总含量为268.1mg/g(干质量),占氨基酸总量的40.52%,必需氨基酸的构成比例低于联合国粮农组织/世界卫生组织的标准。黑斑原的第一限制性氨基酸为缬氨酸,第二限制性氨基酸为蛋氨酸+胱氨酸,必需氨基酸指数为58.12,4种呈味氨基酸总含量为901.7mg/g(干质量)。黑斑原肌肉中重金属汞含量最高,为0.493mg/kg(鲜质量),黑斑原肌肉为砷重度污染级别。研究表明,黑斑原肌肉中,蛋白质质量较好,重金属汞富集显著,黑斑原肌肉为重金属轻度污染级别。 Approximate composition and contents of amino acid and heavy metals were analyzed in muscle of 7 samples of Glyptosternum maculatum collected from the upper reaches of Yarlung Zangpo River by routine methods and the nutritional quality was evaluated by amino acid score and chemical score in order to explore the nutritional components and germplasm protectection of G.maculatum.It was found that the fish had moisture of 77.92%,crude protein of 17.64%,crude fat of 1.42%and crude ash of 0.29%in fresh muscle.There was total amino acid(TAA)of 661.6 mg/g in dry muscle,with total essential amino acid(EAA)of 286.1 mg/g,accounting for 40.52%of total amino acid level,and lower proportion of essential amino acid than the FAO/WHO standard.The amino acid score and chemical score revealed that Val and Met+Cys were the first and second limited amino acids,with essential amino acid index of 58.12,and total delicious amino acid(DAA)of 901.7 mg/g in dry muscle.The maximal content of mercury(0.493 mg/kg)was observed in the wet muscle of G.maculatum,with the arsenic pollution muscle,indicating that G.maculatum is characterized by good quality of protein,mild arsenic pollution and mercury enrichment in muscle.
