摘要
以甜菜干粕为原料,采用柠檬酸-纤维素酶法提取果胶,通过单因素试验和正交试验确定了甜菜果胶的最佳提取工艺。结果表明:柠檬酸法提取果胶的最佳工艺条件为料液pH 1.25、温度95℃、时间4h;纤维素酶法提取果胶最佳工艺条件为酶添加量0.2%、温度40℃、时间50min、pH 4.5;果胶总产率为26.79%,纯度为86%。
With dry sugar beet pulps as the raw materials, the pectin is extracted by citric acid- cellulase method, the optimum extraction process conditions are determined with single factor experiments and orthogonal experiments. The results show that the optimum process conditions for extraction of pectin by citric acid method are pH value of 1.25, temperature of 95 ℃, time of 4 h; the optimum process conditions for extraction of pectin by cellulase method are enzyme dosage of 0.2%, temperature of 40 ℃, time of 50 min, pH of 4.5; the total yield of pectin is 26.79%, the purity of pectin is 86%.
