摘要
抹茶是以经过覆盖栽培的优质绿茶为原料,经过杀青、干燥、碾磨打粉等工艺制成的的翠绿色粉末。抹茶营养价值高,是重要的饮品和食品添加剂。抹茶的生产是我国未来茶产业可持续发展的重要方向之一,抹茶产品的发展给整个茶产业将会带来了巨大的经济效益。本文从茶树品种筛选,栽培技术,鲜叶的蒸青、干燥、碾磨等加工工艺及抹茶在食品中的应用等方面,归纳总结了我国目前已有的抹茶及抹茶食品的研究现状,并对抹茶在我国的发展前景进行了展望。
Matcha is made from the high-quality green tea which is covered and cultivated,and then fixed,dried and ground.Matcha is a kind of nutritional drink and food addition.The production of matcha is one of the most important directions for the sustainable development of tea industry in China.The development of matcha products will bring great economic benefits to the whole tea industry.This paper is based on the selection of tea tree varieties,the cultivation techniques,the steaming,drying,grinding of fresh tea leaves,and the application of matcha in food,summarized the current research status of matcha and matcha food in our country,and prospect the matcha’s development in our country,in order to provide reference for the further development of matcha industry in China.
