摘要
通过描述性分析比较、因子分析、相关性分析、主成分分析等方法,以粒质量、果皮质量、横纵径、硬度、可溶性固形物、可滴定酸、VC、总黄酮、可溶性蛋白等评价指标,对36个不同葡萄品种10种果形进行品质比较,为不常见果形品种欠佳指标提出改良意见。结果表明:椭圆、长椭圆、圆形、束腰形等常见果形可溶性固形物、可溶性蛋白含量等相对较高,可滴定酸含量相对较低,总体口感风味较好。钝卵圆形、倒卵形、长圆形、鸡心形、弯形等特殊果形品种果粒相对较大。可溶性固形物、可滴定酸、固酸比、VC、总黄酮、可溶性蛋白等指标之间存在显著或极显著性正相关或负相关。主成分分析共提取5个主成分,累积方差贡献率83.21%,表明影响葡萄品质指标主要是可溶性固形物、固酸比、可溶性蛋白、粒质量等。综合得分可知,椭圆、长椭圆、圆形、束腰形等常见果形品质评价得分较高。
Through descriptive analysis and comparison, factor analysis, correlation analysis, principal component analysis and other methods, the indexes of single berry weight, pericarp weight, transverse and longitudinal diameter, hardness, soluble solids, titratable acid, VC, total flavonoids and soluble protein were evaluated, the quality comparison of 10 fruit shapes of 36 different grape varieties was carried out, suggestion for improving the uncommon fruit type breed lacking index. The results showed that oval, oblong, round, girdling and other common fruit shape, the content of soluble solids and protein were relatively high, titratable acid content were relatively low, the overall taste and flavor of the fruit were better. Obtuse oval, obovate, oblong, chicken heart-shaped, curved and other special fruit-shaped varieties were relatively large fruit. Among soluble solids, titratable acid, solid-acid ratio, VC, total flavonoid, soluble protein and other indicators have significant or very significant positive or negative correlation. Principal component analysis extracted a total of five principal components, the cumulative variance contribution rate of 83.21%. The results showed that the main influencing factors on grape quality were soluble solids, solid-acid ratio, soluble protein, fruit weight. Comprehensive score showed that oval, oblong, round, girdling shape and other common fruit quality evaluation score higher.
