摘要
检测和统计水产品中的砷形态分布的特征,为水产品污染风险评估及消费者食用提供科学依据。在海南省各农贸市场采集具有代表性的海水鱼、淡水鱼、海水虾、海水蟹、贝类及其他水产品530批。采用高效液相色谱—电感耦合等离子体质谱联用法(HPLC-ICP-MS),测定砷酸根(As(Ⅴ))、亚砷酸根(As(Ⅲ))、一甲基砷(MMA)、二甲基砷(DMA)、砷甜菜碱(AsB)5种砷形态的含量,按GB 2762-2017判定。结果显示:6种水产品中的砷以无毒的有机砷砷甜菜碱(AsB)为主,低毒的有机砷一甲基砷(MMA)和二甲基砷(DMA)含量均≤0.07 mg·kg^(-1),而毒性较大的无机砷含量都在限值要求范围内,海水鱼无机砷含量为0~0.08 mg·kg^(-1);淡水鱼无机砷含量0~0.01 mg·kg^(-1);海水虾无机砷含量0~0.02 mg·kg^(-1);海水蟹无机砷含量0~0.12 mg·kg^(-1);贝类无机砷含量0~0.45 mg·kg^(-1);其他水产品中无机砷含量0~0.03 mg·kg。
Detection and statistics of arsenic speciation distribution characteristics in major aquatic products provide scientific basis for aquatic product pollution risk assessment and consumer consumption. A total of 530 batches of representative marine fish, freshwater fish, seawater shrimp, seawater crab, shellfish and other aquatic products were collected from various farmers’ markets in Hainan. The arsenic speciation contents of arsenate (As(Ⅴ)), arsenite (As(Ⅲ)), monomethyl arsenic (MMA), dimethyl arsenic (DMA) and arsenic betaine (ASB) were determined by HPLC-ICP-MS according to GB 2760-2017. The results showed that the arsenic speciation in the six kinds of aquatic products was mainly non-toxic organic arsenic betaine (AsB), the low-toxic organic arsenic monomethyl arsenic (MMA) and dimethyl arsenic (DMA) contents were ≤ 0.07 mg·kg^-1, while the toxic inorganic arsenic contents were all within the limit requirements, and the inorganic arsenic content in marine fish was 0 ~ 0.08 mg·kg^-1. Inorganic arsenic content in freshwater fish is 0 ~ 0.01 mg·kg^-1;Inorganic arsenic content in seawater shrimp is 0 ~ 0.02 mg·kg^-1;Inorganic arsenic content in seawater crab is 0 ~ 0.12 mg·kg^-1;Inorganic arsenic content in shellfish is 0 ~ 0.45 mg·kg^-1;Inorganic arsenic content in other aquatic products is 0 ~ 0.03 mg·kg^-1.
