基于顶空固相微萃取与气相色谱-质谱联用技术分析赣南茶油特征香气成分 被引量:2

Analysis of the aroma compounds of Gannan tea oils based on Headspace Solid Phase Micro-extraction combined with Gas Chromatography-mass Spectrometry

摘要 采用顶空固相微萃取与气相色谱-质谱联用(HS-SPME-GC/MS)技术对赣南茶油的特征香气成分进行了分析,通过优化萃取条件,共得到82种赣南茶油样品的共有组分,且相对含量较高,是赣南茶油的主要香气成分,共有九大类,包括呋喃类(5种),醛类(20种),醇/酚类(10种)、酸类(6种)、酯类(10种)、酮类(6种)、酰胺类(5种)、醚/烯类(7种)、其他(13种)。其中,醛类物质对赣南茶油整体香气成分的形成贡献最大,本研究发现赣南茶油香气成分中含有20种醛类物质,占茶油香气成分的39.74%。 The aroma compounds of Gannan tea oils were analyzed by Headspace Solid Phase Microextraction (HSSPME) combined with Gas Chromatography-Mass Spectrometry (GC-MS). After the optimization of extraction process, 82 compounds were identified, including Furans (5 species), aldehydes (20 species), alcohols/phenols (10 species), acids (6 species), esters (10 species), ketones (6 species), amides (5 species), ethers/olefins (7 species)) and others (13 species). They were relatively high in content and they were the main aroma components of Gannan tea oil. Among them, aldehydes contributed the most to the aroma formation of Gannan tea oil. It was found that the aroma components of Gannan tea oil contained 20 kinds of aldehydes, accounting for 39.74% of the aroma components of Gannan tea oil.
