摘要
食用木薯具有较为丰富的营养成分和生物活性成分,且具有独特的风味,因而日益受到了人们的重视。综述了近年来国内外木薯块根、茎叶中营养因子(包含蛋白质、淀粉、维生素、β胡萝卜素、矿物质、纤维素、糖类、脂肪)、抗营养因子及生理保健功效方面的研究进展。
Edible Manihot esculenta Crantz is not only rich in nutrients and bioactive components,but also unique flavor,so more and more attention has been paid to it. In this paper,the research progress of the nutritional components (including starch,protein,vitamin,beta-carotene,mineral,cellulose,carbohydrate,fat),anti-nutritional factors and health-care efficacy of edible Manihot esculenta Crantz roots and stems and leaves in recent years are reviewed.
