摘要 采用热泵-热风联合干燥对新鲜红薯叶进行处理,探讨漂烫预处理和干燥条件对红薯叶片品质特性的影响,从而获取低能耗、高品质的红薯叶干制品。采用POD酶活性和叶绿素含量来确定最佳的漂烫预处理条件,并利用复水率、色泽、干燥时间等指标,以及感官评价加权手段来综合评价红薯叶热泵-热风联合干燥过程。结果表明,当漂烫温度90℃,漂烫时间70s时POD酶活性较低,叶绿素含量最大。该处理条件下,红薯叶热泵-热风联合干燥的最佳参数为热泵温度45℃,热泵风速1.0m/s,热风温度60℃,此时获得的红薯叶干制品色泽、感官等指标较好,综合评分最高。 The effects of blanching pretreatment and drying conditions on the quality characteristics of fresh sweet potato leaves were studied by heat pump and hot air combined drying,so as to obtain high-quality sweet potato leaf dry products with low energy consumption.POD enzyme activity and chlorophyll content were used to determine the best pretreatment conditions.The rehydration rate,color,drying time and sensory evaluation were used to evaluate the combined drying process of sweet potato leaf heat pump and hot air.The results showed that blanching temperature 90℃,blanching time 70 s,low POD enzyme activity,chlorophyll content was the largest.The processing conditions,the sweet potato leaf heat pump-the best parameters of hot air drying,heat pump temperature 45℃,heat pump wind speed 1.0 m/s,hot blast temperature 60℃,at the moment of sweet potato products better color,such as sensory index,comprehensive score was highest.
