摘要 沙门氏菌是食品中一类较为常见的致病微生物。近年来世界各地发生过多起沙门氏菌食物中毒事件。因此,对食品中沙门氏菌的检测进行研究意义重大。本文对食品中沙门氏菌检测的传统方法、ELISA法、免疫荧光标记法、PCR法、电阻抗测定法以及生物发光法进行了系统分析,为更好地实施食品中沙门氏菌的检测提供依据。 Salmonella is a relatively common pathogenic microorganism in food. In recent years, many Salmonellarelated food poisoning incidents have occurred around the world. Therefore, research on the detection of Salmonella in food is of great significance. In this paper, the traditional methods of detection of Salmonella in food, ELISA, immunefluorescence labeling, PCR, electrical impedance measurement and bioluminescence were systematically analyzed, which provided a basis for better detection of Salmonella in food.
