摘要
襄荷是日常生活中较为常见的一种食物,但由于人们对其营养功能和保健功效不够了解而尚未开发出来。主要对襄荷的营养价值,以及抗氧化、抗炎抗菌和降低血糖血脂等具体的保健功能进行了综述,介绍了目前国内外襄荷的加工现状及特色产品,并根据襄荷的功能特性和理化性质对襄荷深加工的开发利用前景进行了探讨。
Zingiber mioga Rosc is a common food in daily life,but it has not been developed due to people lack the understanding of its nutritional value and health care function. In this paper,the nutritional value of Zingiber mioga Rosc and its specific health care functions,such as anti-oxidation,anti-inflammation and anti-bacterial,reducing blood glucose and lipids were summarized,the processing status and characteristic products of Zingiber mioga Rosc at home and abroad were introduced,and the development and utilization prospect of Zingiber mioga Rosc deep processing was discussed according to its functional characteristics and physicochemical properties.
