酶解法制备琼胶寡糖的抑菌性证明 被引量:5

摘要 利用产琼胶酶菌株ZQM2017(Vibrio sp.)发酵所得琼胶酶,在不同底物浓度、反应时间下,与底物琼胶反应制备琼胶寡糖,通过抑菌圈出现的频率验证其抑菌性并探究不同水解程度的琼胶寡糖抑菌性的差异。研究表明,琼胶寡糖对大肠杆菌、金黄色葡萄球菌、枯草芽孢杆菌的生长具有不同程度抑制作用;琼胶寡糖的含量随着底物浓度、反应时间的增加而增加,呈正相关关系,而其抑菌性与寡糖的含量没有直接关系,底物浓度对其有显著性影响,2 g/L的底物浓度抑菌性较强。 According to the previous experiments, a strain ZQM2017 named Vibrio sp. which can produce agarase was found. In order to prove the antibacterial properties of agaro-oligosaccharides and identify the effect of hydrolytic degree of agaro-oligosaccharides on antibacterial activity, the frequency of occurrence of inhibition zone was counted, by using agaro-oligosaccharides prepared by enzymatic hydrolysis in different concentration of the substrate and reaction time as antibacterial agent. The result showed that agaro-oligosaccharides had inhibiting effects on Escherichia coli, Staphylococcus aureus and Bacillus subtilis in varying degrees. The content of the agar hydrolyzate increased with the concentration of the substrate and reaction time, showing the presence of positive correlation, meanwhile, it showed that there was no direct connection between the antibacterial activity and the content of agaro-oligosaccharides. But the concentration of the substrate presented a notable correlation, which showed that agar of the concentration of 2 g/L had preferable antibacterial activity.
