摘要
为改善再造烟叶梗膏品质,在梗膏外添加氨基酸进行美拉德反应,结果表明:梗膏经过反应,水溶性总糖及水溶性还原糖含量降低,感官质量方面改善了产品吸味,降低产品刺激性。
To improve the quality of reconstituted tobacco stem paste,amino acids were added to the stem paste for maillard reaction.The results showed that the content of water-soluble total sugar and water-soluble reducing sugar was decreased,and the sensory quality was improved.
