摘要 辐射传热是指高温物体以电磁波的形式发射能量而进行加热的一种烹饪方式。辐射传热在烹饪工艺中具有应用广泛、快速、均匀、高效加热的优点。文章概述了辐射传热的传热机理,对国内外烹饪工艺中辐射传热在烹饪方法、烹饪设备中的研究现状进行了综述,并对烹饪工艺辐射传热的应用前景做出展望。 Radioactive heat transfer refers to a cooking method in which high temperature objects radiate energy in the form of electromagnetic waves. Radiation heat transfer has the advantages of wide application, fast, uniform and efficient heating in cooking process. In this paper, The mechanism of radiative heat transfer is summarized. The research status of radioactive heat transfer in cooking methods and equipment at home and abroad is summarized. The application prospect of radiative heat transfer in cooking process is also predicted.
