摘要
为了提高茶籽油的耐寒性 ,提高产品的档次与市场竞争力 ,对茶籽油的冬化条件如降温速率、结晶温度、养晶时间等进行了研究 .结果表明 ,当结晶温度为 4℃ ,前期降温速率为 2 .0℃ / h,后期降温速率为 0 .3℃ / h,养晶时间为 18h时 ,茶籽油冬化效果较好 .
In order to increase the cold-resistance of camellia oil and make this product a quality commodity with competitive,it is necessary to treat the oil under winterizing conditions. This paper is a probe into the winterizing condition of camellia oil, whicht is composed of the fallingtemperature velocity, crystallizing point,keeping crystal time and the condition of crystal separating.Results show the winterization of camellia oil is in a relatively good condition when crystallizing point is 4 ℃,the earlier falling temperature velocity is 2.0 ℃/ h, the late falling temperature velocity is 0.3 ℃/ h and keeping crystal time is 18 h.
