摘要
本文研究了影响广式月饼外观的几种关键因素,包括月饼的颜色、回油、爆皮、塌皮、图案等。经过分析论证,从根本上找到理想的解决方法:改变馅料配方、饼皮配方,提高烘烤技术;丰富月饼表面符号图案,提高月饼外观、靓丽形象和色泽,进而制作出色、香、味俱全的月饼,提高消费者的购买欲望和食欲。
Several key factors affecting the appearance of Cantonese moon cakes were studied in this paper,namely the color of moon cakes,oil return,blasting,treading,patterns.After analysis and argumentation,we fundamentally find the ideal solution.By changing the filling formula and the crust recipe;improving the baking technology;enriching the surface symbol pattern of the moon cake,thereby to improving the appearance and color of the moon cake,and then to make the moon cake with excellent,fragrant,delicious and beautiful,which increase the consumer’s desire to purchase and appetite.
