紫苏叶花色苷微波辅助提取工艺优化及其抗氧化活性 被引量:21

Optimization of Microwave-Assisted Extraction of Anthocyanin from Peril a Leaves and Its Antioxidant Activity

摘要 为充分利用紫苏资源,提高其经济价值。采用微波辅助提取紫苏叶花色苷,并分析其对3种自由基的清除能力。以紫苏叶中花青素的提取率为考察指标,在单因素试验的基础上,采用正交试验研究乙醇体积分数、料液比、微波功率、微波时间4个提取条件对紫苏叶花色苷得率的影响。结果表明,微波辅助提取紫苏花色苷最佳提取条件为体积分数70%、料液比1︰25(g/mL)、微波功率280 W、微波时间120 s。在此工艺条件下,花色苷得率最高,提取率达到56.51±0.55 mg/100 g。而且对DPPH自由基、ABTS+·和超氧阴离子自由基有较高的清除能力,清除率分别达到40.4%,52.7%和43.7%。 In order to make full use of perilla resources and improve its value.Anthocyanins were extracted from perilla leaves by microwave-assisted extraction,and the scavenging ability to 3 kinds of free radicals was also analyzed.With the extraction rate of anthocyanins from perilla leaves as an indicator,on the basis of single-factor tests,the effects of ethanol volume fraction,material-to-liquid ratio,and microwave power and microwave time on the anthocyanin of perilla leaves were studied by orthogonal test.The results showed that the optimal extraction condition for microwave-assisted extraction of anthocyanins from perilla leaves was ethanol volume fraction 70%,material-to-liquid ratio 1︰25(g/m L),microwave power 280 W,and microwave time 120 s.Under the condition,the extraction of anthocyanin of perilla leaves was highest and the extraction rate was 56.51±0.55 mg/100 g.High scavenging ability for superoxide anion radical,ABTS+and DPPH free radical was achieved.The scavenging rate was 40.4%,52.7%and 43.7%respectively.
