摘要
研究了饲养方式对宁都三黄鸡肌肉品质及矿物元素含量的影响,选用56日龄宁都三黄鸡母鸡240只,随机分成4组,每组3个重复,每个重复20只,分别进行笼养(L组)、网上平养(W组)、地面平养(P组)和散养(S组),相同饲粮饲养至120日龄。结果表明:(1)L组的胸肌肉水分含量显著低于其他3组(P<0.05);S组的粗蛋白含量、氨基酸总量、8种必需氨基酸含量及7种甜鲜味氨基酸含量均最高,但与其他3组差异不显著(P>0.05);S组的胸肌肉丝氨酸含量最高,与W组和P组差异显著(P<0.05);S组的胱氨酸含量显著高于P组(P<0.05)。(2)W组与L组的胸肌肉油酸含量显著高于P组(P<0.05);P组的亚麻酸含量最高,且与L组差异显著(P<0.05);P组的必需脂肪酸含量最高,且与S组差异显著(P<0.05)。(3)饲养方式对宁都三黄鸡胸肌肉矿物元素含量指标无显著差异(P>0.05)。由此可见,4种饲养方式对宁都三黄鸡肌肉氨基酸含量、脂肪酸含量有一定影响;散养方式下更有利于提高宁都三黄鸡肌肉营养价值;4种饲养方式不会影响宁都三黄鸡肌肉的矿物元素沉积。
This experiment was conducted to investigate the effects of feeding methods on muscle quality and mineral element content of Ningdu Three-yellow Chicken. A total of 240 56-day-old hens of Ningdu Three-yellow Chickens were randomly divided into 4 groups, which included 3 repeats of 20 birds. They were caged rearing group(group L), net rearing group(group W), floor rearing group(Group P) and free range rearing group(group S). They were raised to 120 days of age with the same diet. The results showed that:(1) The moisture content of thoracic muscle was significantly lower than that of the other three groups(P<0.05);the contents of crude protein, total amino acids, 8 essential amino acids and 7 sweet and delicious amino acids in group S were the highest, but there was no significant difference from the other three groups(P>0.05);the content of serine in thoracic muscle was the highest in group S, and was significantly different from that in group W and group P(P<0.05);cystine content in group S was significantly higher than that in group P(P<0.05).(2) The content of oleic acid in thoracic muscle in group W and group L was significantly higher than that in group P(P<0.05);linolenic acid content was the highest in group P, which was significantly different from group L(P<0.05);essential fatty acid content was the highest in group P, which was significantly different from group S(P<0.05).(3) There was no significant difference in mineral elements content in thoracic muscle between different feeding methods in Ningdu Three-yellow Chicken(P>0.05). It could be seen that the four feeding methods had certain effects on the amino acid and fatty acid content in muscle of Ningdu Three-yellow Chicken;the free-range feeding method was more conducive to improve the nutritional value of Ningdu Three-yellow Chicken muscles;the four feeding methods did not affect the deposition of muscle mineral elements in Ningdu Three-yellow Chicken.
