摘要 以红松(Pinus koraiensis)种鳞为原料,提取纯化得到红松种鳞多酚,通过测定多酚在不同加工条件下保存率的变化,研究了pH值、温度、光照强度、氧化剂、还原剂、糖和金属离子对红松种鳞多酚稳定性的影响。结果表明:红松种鳞多酚在pH=3、4℃低温下稳定性较好,其保存率为93.06%;光照对多酚稳定性影响显著,紫外光照射下多酚保存率为69.79%;糖类的加入有助于提高多酚稳定性,蔗糖对多酚稳定性的提高效果总体好于葡萄糖和果糖,50%蔗糖能使多酚保存率增加4.54%;氧化剂、还原剂对红松多酚具有明显的破坏作用,且氧化剂的影响明显大于还原剂;Cu^2+、Fe^3+等多种金属离子对多酚稳定性有影响,其中Fe^3+的破坏作用最显著。试验表明,为保证红松种鳞多酚的稳定,应低温避光及酸性条件下保存,糖类的适当添加有利于多酚的保藏,贮藏及加工过程中应避免氧化还原剂和金属离子的加入。 The Pinus koraiensis seed scales were used as test materials to extract and purify polyphenols.The effects of different pH values, temperature, light intensity, oxidants, reductants, sugars and metal ions on the stability of polyphenols from Pinus koraiensis seed scales were studied by measuring the retention rate of polyphenols under different processing conditions. The polyphenols from P. koraiensis seed scales were stable under acidic and low-temperature conditions, and the retention rate was 91.48% and 93.06% under pH 3 and at 4 ℃. Light intensity had a significant influence on the stability of polyphenols. The retention rate of polyphenols under ultraviolet light irradiation was 69.79%. The addition of sugars contributed to the improvement of the stability of polyphenosl. Sucrose improved the stability of polyphenols generally better than glucose and fructose. The 50% sucrose can increase the retention rate of polyphenols by 4.54%. The oxidant and reductant significant destructive effect on the polyphenol of P. koraiensis, and the effect of the oxidant was significantly greater than that of the reductant. Various metal ions such as Cu^2+ and Fe^3+ had effects on the stability of polyphenols, of which the destruction of Fe^3+ was most significant. The results showed that in order to ensure the stability of polyphenols from Pinus koraiensis seed scales, it should be stored at low temperature and shield from light and under acidic conditions. The proper addition of sugars is conducive to the preservation of polyphenols. The addition of redox agents and metal ions should be avoided during storage and processing.
