摘要
我国是一个蒸馏酒酿造大国,白酒每年的产量巨大,伴随而来的副产物酒糟产量也巨大。酒糟里面成分复杂,大量的微生物代谢抑制物留在酒糟中,酒糟还保留比较致密的纤维结构难以分解,使其利用变得困难,如果能够合理利用酒糟里面的成分,就能变废为宝,为企业带来效益;如果不能够妥善处理,对企业来说是一个巨大的挑战。从是否使用微生物的角度介绍几种现有的对酒糟进行开发利用的方法,为更好地应用酒糟这一资源提供思路,同时展望一下接下来酒糟综合利用比较有可行性的利用模式。
China is a big country of distillery brewing. The annual output of liquor is huge, and the accompanying by-product distiller’s grains are also huge. The composition of the distiller’s grains is complicated, and a large number of microbial metabolism inhibitors remain in the distiller’s grains. The distiller’s grains still retain relatively dense fibrous structures and are difficult to decompose, making it difficult to use. If the ingredients in the distiller’s grains can be reasonably utilized, they can turn waste into treasure. Bringing benefits to the company;if not handled properly, it is a huge challenge for the company. This article will introduce several existing methods for the development and utilization of distiller’s grains from the perspective of whether or not to use microorganisms, and provide ideas for better application of distiller’s grains, and look forward to the more feasible utilization mode of comprehensive utilization of distiller’s grains.
