影响迎驾贡酒饮后舒适度的关键酒体成分研究 被引量:11

摘要 通过对饮酒后小鼠自主行为变化以及酒精代谢程度的比较研究,对迎驾贡酒不同产品及其他浓香型白酒产品的饮后舒适度进行评价,同时结合酒体风味成分的主成分分析(PCA),对酒样在饮后行为及酒精代谢中起关键作用的酒体风味成分初步研究确定,以期为迎驾贡酒产品品质提高提供数据基础。研究表明,迎驾贡酒不同产品及其他浓香型白酒之间在小鼠饮酒后的精细行为参数行动距离、行动距离比、血浆乙醇及乙醛含量方面存在显著差异性(P<0.05),迎驾贡酒A产品饮后行为表现适度放松,酒精代谢较快,血液中乙醛转化积累量较低,初步推测与其酒体中异戊醇等醇类物质、异戊醛等醛类物质含量较低,己酸等酸类物质含量较高,乙酸乙酯等酯类物质在酸酯比例协调性中起主要作用有关。 In this study,the comfort after drinking different Yingjia Gongjiu liquor products and other Nongxiang Baijiu products was evaluated through comparative analysis of autonomous behaviors data and alcohol metabolic levels in mice after intragastric administration.Meanwhile,PCA analysis of the flavoring components in liquor samples was performed and the key components playing important roles in after-drinking behaviors and alcohol metabolism were determined to provide data base for further improvement of the quality of Yingjia Gongjiu liquor.The results showed that,there were significant differences(P<0.05)between Yingjia Gongjiu liquor and other Nongxiang Baijiu products in the move distance,the locomotion ratio,alcohol and acetaldehyde concentration in plasma after drinking;the mice,intragastrically filled with Yingjia Gongjiu liquor A sample,displayed moderately relaxed behaviors,its alcohol metabolism was increased,and its accumulation of acetaldehyde in blood was decreased,which might be related to the relatively low levels of alcohols and aldehydes such as isopentyl alcohol and isopentyl aldehyde,and the relatively high levels of acids and esters such as caproic acid and ethyl acetate,and the harmonious proportion of acids and esters in liquor A sample.
