小米糠水溶性非淀粉多糖抗氧化活性研究 被引量:8

摘要 为了合理开发利用小米糠资源,提取小米糠中水溶性非淀粉多糖(SNSP),分析了SNSP的相对分子质量和单糖组成,测定了其中总酚与黄酮含量,并以对DPPH·、O^-2·、ABTS^+·、·OH清除能力以及Fe^2+螯合能力和Fe^3+还原能力为指标,研究了小米糠及SNSP的抗氧化活性。结果表明,SNSP的重均相对分子质量为1.930×10^6g/mol,主要单糖为葡萄糖;SNSP中总酚与黄酮含量分别为426.12μgGAE/g与64.19μgRE/g;与小米糠相比,SNSP具有较强的抗氧化活性,尤其是对·OH、O^-2·的清除能力以及Fe^3+还原能力和Fe^2+螯合能力(P<0.05)。 In order to rationally develop and utilize the millet bran,the water-soluble non-starch polysaccharide(SNSP)was extracted from the millet bran.The molecular weight and monosaccharide composition of SNSP were analyzed,and the content of total phenols and flavonoids were also determined.The antioxidant activities of millet bran and SNSP were evaluated with DPPH·,O^-2,ABTS^+·,·OH scavenging ability,Fe^2+chelating ability and Fe^3+reducing ability as indicators.The results showed that the weight average molecular weight of SNSP was 1.930×10^6 g/mol and the main monosaccharide was glucose.The contents of total phenols and flavonoids in SNSP were 426.12μg AE/g and64.19μgRE/g,respectively.Compared with millet bran,SNSP had strong antioxidant activity in vitro,especially for·OH,O^-2·scavenging ability,Fe3+reducing ability and Fe2+chelating ability(P<0.05).
