摘要
对乌龙茶加工工艺及适制品种进行研究,首先分析乌龙茶的基本特征和发展趋势,然后阐述乌龙茶的加工工艺,其主要内容有采摘、萎凋、做青与烘焙等环节,最后分析乌龙茶的适制品种,目的在于为高品质乌龙茶的加工及原料选择提供依据。
Based on the research of Oolong tea processing technology and suitable varieties,this paper first analyzes the basic characteristics and development trend of Oolong tea,then expounds the processing technology of Oolong tea,its main contents are:picking,withering,making green,baking and other links,finally analyzes the suitable varieties of Oolong tea,in order to provide the basis for the processing technology and raw material selection of high-quality oolong tea.
