摘要
为了解苦瓜多种活性成分的提取工艺、功效及相关功能产品的开发应用,对近年来的研究进行分析。结果表明,苦瓜活性成分主要包括苦瓜水提物、醇提物、多糖、皂苷、蛋白、多肽和苦瓜汁,具有调节糖脂代谢、抑菌、抗氧化、抗肿瘤等作用,苦瓜保健产品包括苦瓜茶、苦瓜酒、苦瓜饮料、苦瓜果脯、苦瓜罐头和苦瓜果酱等,并展望了苦瓜加工工艺、作用机制的研究思路。
In order to realize the extraction process and function of many active ingredients in bitter melon as well as the development and application of relative functional products, a review is conducted on the research during recent years. The results show that bitter melon active ingredients includes water extracts, ethanol extracts, polysaccharides,saponin, protein, peptide and juice, which regulate glucolipid metabolism, and antimicrobial, antioxidant and antineoplastic effects. Functional products of bitter melon include bitter melon tea, bitter melon wine, bitter melon beverage, bitter melon preserved fruits, bitter melon canned fruits, and bitter melon jam. In addition, research direction of processing technics and mechanism of action of bitter melon are discussed.
