摘要
以宁夏贺兰山东麓葡萄产区的酿酒葡萄为研究对象,对酿酒葡萄中重金属含量及微量元素、糖、酸等营养成分进行检测分析。结果表明,连续2年采集的酿酒葡萄中重金属的综合污染指数分别为0.092和0.430,其质量等级划分属一级,污染等级为安全,污染水平为清洁;酿酒葡萄中糖、酸、铁、锌、锰、铜平均含量依次为17.95 g/kg、0.71 g/kg、8.12 mg/kg、0.92 mg/kg、1.27 mg/kg、1.27 mg/kg,糖、酸含量和糖酸比在不同年份间存在显著性差异(P<0.05);葡萄中多个变量之间具有显著相关性(P<0.05),其中锌、锰、铜、铁相互间、酸和锌、锰和铜呈显著正相关(P<0.05);糖和酸呈显著负相关(P<0.05)。通过主成分分析(PCA)筛选出Fe、Zn、糖和酸作为酿酒葡萄的特征指标。
Taking the wine grape in the eastern foot of Helan Mountain of Ningxia as the research object,the contents of heavy metals,trace elements,sugar,acid and other nutrients in wine grape were detected and analyzed.The results showed that the comprehensive pollution index of heavy metals in wine grape collected for two years was 0.092 and 0.430,respectively,indicating that the quality of wine grape was classified as grade 1,the pollution class was safe,and the pollution level was clean.The average contents in wine grape of sugar,acid,Fe,Zn,Mn and Cu were 17.95 g/kg,0.71 g/kg,8.12 mg/kg,0.92 mg/kg,1.27 mg/kg,and 1.27 mg/kg,respectively.There were significant differences in sugar content,acid content and sugar-acid ratio in the grape of different years(P<0.05).There was a significant correlation between multiple nutrients contents in grape(P<0.05),among them,Zn,Mn,Cu and Fe were significantly positively correlated with each other,acid with Zn and Mn with Cu were significantly positively correlated(P<0.05),and sugar and acid content was significantly negatively correlated(P<0.05).Results showed that Fe,Zn,sugar and acid could be selected as the characteristic indexes of wine grape by principal component analysis.
