假蒌叶的功效及其在烹调中的运用研究 被引量:1

摘要 对假蒌所含的风味与营养物质——烯烃类、醇类、醛酮类、杂环化合物、酯类、有机酸、钙、铁、锌、锰、维C等进行了研究,论述了假蒌叶镇痛消炎、预防和治疗糖尿病、预防动脉粥样硬化、提升抗氧化功能的功效。在烹调中与其他调辅原料搭配使用,制作出多种凉菜、汤羹、热菜、主食、小吃品种。随着宣传推广力度的加大,消费者接受度逐步提升,其开发利用的商业价值将越来越大。 In this paper,the flavor and nutrients of pseudotrichosanthes,such as alkenes,alcohols,aldehydes and ketones,heterocyclic compounds,esters,organic acids,calcium,iron,zinc,manganese,vitamin C,etc.,were studied and discussed.The results showed that pseudotrichosanthes has the effects of analgesia and anti-inflammatory,as well as the effects of prevention and treatment of diabetes,prevention of atherosclerosis,and improvement of antioxidant function.It could be used with other ingredients in cooking to produce a variety of cold dishes,soups,hot dishes,main foods and snacks.With the increase of promotion and consumer acceptance,the commercial value of its development and utilization will be greater and greater.
