摘要
益生菌可以调节人体肠道菌群平衡,是一类对人体有益的微生物调节剂,应用价值十分广泛,为促进人类健康和营养做出了卓越贡献。文中就益生菌的定义、种类、功效、作用机制及其在食品加工中的应用状况进行了综述,为拓宽益生菌的应用领域,研发新型高端益生菌产品提供一定的理论基础。
Probiotics can regulate human intestinal flora balance,is a kind of beneficial microbes regulator,svery extensive application value,to promote humanmade outstanding contributions to the health and nutrition.In this paper,the definition of a probiotic and types,the effect of probiotics and the status of the mechanism and its application in food processing were reviewed,to broaden the probiotic food applications,research and development of new high-end probiotic products,giving a certain theoretical basis.
