摘要
目的建立一种快速检测食品中儿茶酚的方法。方法以检测儿茶酚为例合成了一种多孔卟啉金属有机骨架材料(metal-organic frameworks,MOF)为PCN222,并对其进行红外、紫外、电镜的表征,构建了基于壳聚糖-PCN222/GC生物传感器来实现对儿茶酚的快速高效检测。通过循环伏安曲线和时间-电流曲线对壳聚糖-PCN222/GC生物传感器进行电学性能表征。结果合成的PCN222形貌、粒径比较均一。构建的壳聚糖-PCN222/GC传感器对儿茶酚显示较强的电学响应,并且具有很好的选择性。壳聚糖-PCN22/GC传感器对儿茶酚的线性范围为10~70μmol/L,检出限为10μmol/L,响应时间为4 s。结论酚类化合物属于毒性很强的污染物且广泛存在于植物源性食品中。当人类摄入过高的酚类时就会导致细胞中的蛋白质变性,进一步的使细胞失活使人体产生一些疾病,所以此方法对实现食品中酚类的快速检测具有重要意义。
Objective To establish a method for the rapid determination of catechol in food.Methods This experiment took the detection of catechol as an example,a porous porphyrin metal organic framework material(metal-organic frameworks,MOF)was synthesized as PCN222,PCN222 was characterized by FTIR,UV-vis and electron microscope,and a chitosan-PCN222/GC biosensor was constructed to detect catechol quickly.The electrical properties of the chitosan-PCN222/GC biosensor were characterized by cyclic voltammetry and time-current curves.Results The morphology and particle size of the synthesized PCN222 were uniform.The constructed chitosan-PCN222/GC sensor showed strong electrical response to catechol and good selectivity.The linear range of catechol in the chitosan-PCN222/GC sensor was 10~70μmol/L,the detection limit was 10μmol/L,and the response time was 4 s.Conclusion Phenolic compounds are highly toxic pollutants and widely exist in plant-derived foods.When human intake excessive phenolic will cause the protein in the cell degeneration,further make the cell inactivation and make human body produce some disease,so the realization of phenols in food rapid detection is of great significance.
