摘要
本研究对亚麻籽油理化性质测定并与油菜籽油进行了比较分析。结果表明,通过相同的提取方式,二者含油量、粗蛋白质量分数、氨基酸含量、籽油特征指标、金属含量、胆固醇及脂质含量有一定的差异。‘浙油杂108’种子含油量为45.66%,‘HLJ71’种子含油量为39.06%,‘浙油杂108’种子粗蛋白质量分数为19.00(g/100 g),‘HLJ71’粗蛋白质量分数为23.90(g/100 g)。从氨基酸含量角度看,‘HLJ71’中含量最高的是谷氨酸,为20299.45μg/g FW,‘浙油杂108’中含量最高的也是谷氨酸,为18506.13μg/g FW。‘HLJ71’中氨基酸总量为112533.80μg/g FW,‘浙油杂108’中氨基酸总量为109119.41μg/g FW。亚麻‘HLJ71’中的铁、锌、镁元素均高于油菜‘浙油杂108’。亚麻‘HLJ71’中的游离胆固醇、总胆固醇、β-谷甾醇含量均低于油菜‘浙油杂108’。亚麻‘HLJ71’中的豆甾醇含量显著高于油菜‘浙油杂108’,而麦角甾醇含量不存在差异。亚麻籽通过一定处理后可以作为补充氨基酸的功能食品加以开发,可大大提高其经济附加值。
In this study,physicochemical properties of flaxseed oil were determined and compared with rapeseed oil.The results showed that through the same extraction method,there were some difference on the oil content,crude protein mass fraction,amino acid content,seed oil characteristic index,metal content,cholesterol and lipid content between two seed oils.The oil content of‘Zheyouza 108’seed was 45.66%,the oil content of‘HLJ71’seed was 39.06%.The crude protein mass fraction of‘Zheyouza 108’seed was 19.00(g/100 g),the crude protein mass fraction of‘HLJ71’was 23.90(g/100 g).From the perspective of amino acid content,the highest content in‘HLJ71’was glutamic acid,which was 20299.45μg/g FW,and the highest content in‘Zheyouza 108’was also glutamic acid,which was 18506.13μg/g FW.The total amount of amino acid was 112533.80μg/g FW in‘HLJ71’,the total amount of amino acid was 109119.41μg/g FW in‘Zheyouza 108’.The iron,zinc and magnesium elements in‘HLJ71’linseed were both higher than those in‘Zheyouza 108’rapeseed.The content of free cholesterol,total cholesterol andβ-sitosterol in’HLJ71’linseed were lower than those in‘Zheyouza 108’rapeseed.The content of stigmasterol in‘HLJ71’linseed was significantly higher than that of‘Zheyouza 108’rapeseed,but the ergosterol content has no difference.Linseed can be developed as a functional food supplemented with amino acids after a certain of treatments,which can greatly increase its economic added value.
