二氧化氯杀菌技术在甜菜制糖加工中的应用研究 被引量:2

摘要 甜菜制糖加工过程中容易受到微生物的侵染而导致糖分损失。随着人们对食品安全的重视和相关监管的日趋严格,开发用于甜菜制糖加工过程的绿色安全杀菌剂具有重要意义。本研究评测了含20%二氧化氯的杀菌剂CD-1在甜菜制糖浸出工段的杀菌性能,结果表明,在室温下,添加500 mg/kg的CD-1杀菌剂,2 h杀菌率为91.3%,其杀菌效果比500 mg/kg的焦亚硫酸钠(CK)高6.4个百分点。在浸出汁45~55℃热处理条件下,添加125 mg/kg的CD-1杀菌剂在90 min时的杀菌率为75.6%,与CK的杀菌率74.4%相当;添加250和500 mg/kg的CD-1杀菌剂在90 min时杀菌率分别达到97.3%和98.2%,比CK高22.9~23.8个百分点。在甜菜制糖车间中试中,添加500 mg/kg的杀菌剂CD-1,在5 h杀菌率达到99.2%;添加300 mg/kg的杀菌剂CD-1,在7.5 h杀菌率达到92.6%,达到生产要求。以二氧化氯为核心成分的杀菌剂,与目前国内甜菜制糖领域常用的杀菌剂焦亚硫酸钠相比,在同等添加量的情况下,该杀菌剂的杀菌速度更快,杀菌效果好于焦亚硫酸钠。 Sugar loss is caused by microorganism infection in sugar beet processing.With the attention to food safety and more and more strict supervision,it is of great significance to develop green safe fungicides for sugar beet processing.In the study,the bactericidal performance of fungicides containing 20%chlorine dioxide CD-1 in sugar beet leaching section was evaluated.The results showed that when 500 mg/kg CD-1 fungicides were added at room temperature,the bactericidal rate was 91.3%at 2 h,which was 6.4 percentage points higher than that of 500 mg/kg sodium pyrosulfite(CK).Under 45-55℃heat treatment of diffusion juice,the sterilization rate of 125 mg/kg CD-1 fungicides was 75.6%at 90 min,which was equivalent to 74.4%of the CK;The sterilization rates of 250 mg/kg and 500 mg/kg CD-1 fungicides reached 97.3%and 98.2%at 90 min,respectively,which were 22.9-23.8 percentage points higher than that of the CK.In the pilot test of sugar beet workshop,the sterilization rate of 500 mg/kg CD-1 fungicides reached 99.2%at 5 h,and 300 mg/kg reached 92.6%at 7.5 h,which met the production requirements.Compared with sodium pyrosulfite which is commonly used in the field of domestic beet sugar production,a fungicide with chlorine dioxide as core component had faster bactericidal rate and better bactericidal effect than sodium pyrosulfite with the same amount of addition.
