有机溶剂法提取辣椒红色素的工艺研究 被引量:9

摘要 以新疆辣椒为原料,研究有机溶剂法提取干红辣椒中辣椒红色素的工艺条件,在保证提取率相对较高的前提下,获得高色价的辣椒红色素。考察了95%乙醇、丙酮、乙酸乙酯和正己烷四种有机溶剂对辣椒红色素提取效果的影响,结果表明,正己烷为最佳的提取溶剂。提取温度、提取时间、液料比和提取次数对辣椒红色素的色素相对量影响程度从大到小依次为:液料比、提取时间、提取温度、提取次数。通过单因素实验和正交实验确定正己烷提取的最优条件为:粉碎粒度20~40目、提取温度65℃,提取时间110min,液料比5mL/g,提取2次。在该提取工艺条件下,干红辣椒中辣椒红色素的色素相对量达到了9.21%。 Taking Xinjiang pepper as raw material,the technological conditions of extracting capsanthin from dried red pepper by organic solvent method were studied.On the premise of guaranteeing relatively high extraction rate,capsanthin with high color value was obtained.The effects of 95%ethanol,acetone,ethyl acetate and n-hexane on the extraction of capsanthin were investigated.The results showed that n-hexane was the best extraction solvent.The effects of extraction temperature,extraction time,liquid-to-material ratio and extraction times on the relative amount of pigments of capsanthin were in the order of liquid-to-material ratio,extraction time,extraction temperature and extraction times.The optimum extraction conditions of n-hexane were determined by single factor experiment and orthogonal experiment as follows:crushing particle size 20~40 mesh,extraction temperature 65℃,extraction time 110min,liquid-to-material ratio 5mL/g,extraction twice.Under these extraction conditions,the relative amount of pigments of capsanthin in dried red pepper was 9.21%.
