摘要
目的对一起因食用快餐而引起的食源性疾病进行调查分析,查明病原菌,为采取相应防治措施提供依据。方法采集此次事件中某快餐饭店当天的剩余食物及加工剩余原料10份、食品加工场所环境涂抹样品5份、肛拭子18份(加工人员4份、学生病例14份),共33份样品进行分离培养,对分离菌株进行血清分型和脉冲场凝胶电泳(PFGE)分型。结果从所检样品中分离出11株肠炎沙门菌(其中5份剩余食物及加工剩余原料、3份食品加工场所环境涂抹样、1份加工人员肛拭子、2份学生病例肛拭子),血清分型相同,经PFGE分型分析证实均为同源菌株。结论综合现场流行病学调查、患者临床症状与体征及实验室检验结果,确认该起食源性疾病由肠炎沙门菌污染引起,PFGE可有效应用于食源性疾病溯源。
Objective To investigate and analyze a foodborne disease caused by eating fast food to identify pathogenic bacteria,and provide basis for investigation and pathogenic analysis.Methods The remaining foods and processing of the residual raw materials of a fast food restaurant in the incident were collected for ten samples,five samples of environmentally smeared food processing sites,18 anal swabs(4 processing workers,14 student cases),a total of 33 samples.The isolated strain was subjected to serotyping and PFGE typing.Results Eleven strains of S.Enteritidis were isolated from the samples(including five parts of remaining food and processed surplus materials,three food processing environment smears,one processing staff anal swab,two students cases anal swab).The serotypes were the same and confirmed to be homologous strains by PFGE typing analysis.Conclusion Comprehensive epidemiological investigation,clinical symptoms and signs of patients and laboratory test results confirmed that the foodborne disease was caused by Salmonella enteritidis.Pulsed-field gel electrophoresis(PFGE)can be effectively applied to the traceability of foodborne diseases.
