摘要
目的:对赣州市的大学生进行外卖行为的现况调查,了解平均每周点外卖次数,对外卖食品的安全认知以及营养价值认知等情况,探讨平均每周点外卖次数的可能影响因素,并提出改进建议。方法:采用随机抽样的方法,结合查阅文献制定的问卷对赣南医学院、赣南师范大学、江西理工大学部分学生进行调查,收集整理数据并进行描述性分析,单因素分析,有序多分类Logistic回归分析。结果:(1)21.1%的大学生认为外卖食品卫生不安全或很不安全,68.1%的人认为一般,但还有10.9%的人认为外卖食品卫生安全或很安全。26.9%的大学生不赞同或很不赞同外卖食品具有营养价值,66.4%的人认为一般,但还有6.7%的人赞同或很赞同外卖食品具有营养价值。(2)在最近三个月平均每周点外卖次数中,没有点过外卖的占40.6%,每周1~2次的有36.2%,每周3~4次的有10.9%,每周5~6次的有5.4%,每周6次及以上的有6.9%。有序Logistic回归分析结果表明,性别、专业、年级、月基本生活费、对外卖食品营养价值认知、认为外卖会增加经济负担是点外卖次数的影响因素。结论:大学生对外卖食品的卫生质量以及营养价值方面认识不足,应该积极宣教外卖食品安全知识以及营养价值知识,提高大学生对外卖的认识水平,从而合理选择外卖。
Objective:To investigate the current situation of take-away behaviors of college students in Ganzhou,to understand the average number of take-outs per week,the safety awareness of take-away and the awareness of its nutritional value,and to provide suggestions for improvement by analyzing the possible factors affecting the average number of take-outs per week.Methods:A questionnaire survey was conducted among college students from 3 universities in Ganzhou by random sampling.The data were analyzed by descriptive analysis,univariate analysis and ordinal logistic regression.Results:(1)21.1%college students think that take-away food is unsafe or highly unsafe,and 68.1%think it is normal,but 10.9%think that take-away food is safe or highly safe.26.9%college students disapproved or obviously disagreed with the nutritional value of take-away foods,and 66.4%thought it was normal,but 6.7%of them agreed or strongly agreed that the take-away foods has nutritional value.(2)Among the average number of take-aways per week in the last three months,40.6%have not ordered take-aways,36.2%have been 1-2 times a week,10.9%have been 3-4 times a week,5.4%have been 5-6 times a week and 6.9%for 6 times a week and above.The results of ordinal logistic regression analysis showed that gender,profession,grade,monthly basic living expenses,cognitive level of nutritional value of take-outs,and the increase in economic burden of takeaways were the influencing factors of the number of take-outs.Conclusion:The understanding of the health quality and nutritional value of take-away foods is not comprehensive.College students should actively acquire knowledge about take-away foods safety and nutritional value,and raise the level of relative knowledge so as to reasonably choose take-away foods.
