摘要
硒是人体必需的微量元素之一,具有多种不同形态,人们可通过食物补充硒元素,因此准确测定食品中硒总量及形态分布,对富硒食品的开发和人体按需补硒具有重要意义。本文对近年来国内外学者在富硒食品中硒元素形态分析前处理方法、分离及检测方法研究方面取得的进展进行综述,为硒产业的长远发展提供参考。
Selenium is one of the essential trace elements of human body,which has many different forms.People can supplement selenium through food.Therefore,it is of great significance to accurately determine the total amount and distribution of selenium in food for the development of selenium rich food and the supplement of selenium on demand.In this paper,the progress of pretreatment,separation and detection of selenium in selenium rich foods by scholars at home and abroad in recent years is reviewed,which provides reference for the long-term development of selenium industry.
