摘要
目的:建立舟山地区主要经济水产动物总硒含量及不同组织部位硒含量分布数据库,为膳食补硒和富硒水产精深加工产品的开发提供借鉴。方法:采用微波消解氢化物发生原子荧光光谱法对舟山地区9种主要常见淡水水产品和11种主要经济海产品中总硒含量进行测定,同时又考察了4种主要经济鱼类不同组织部位硒含量分布情况。结果:海产品中平均总硒含量(0.361μg·g^-1)要明显高于淡水水产品(0.139μg·g^-1);总硒水平和水产品的种类、个体大小、摄食习性、生长环境等因素相关。鱼体各组织中,内脏和鳃中硒含量较高,而鱼鳞和鱼骨中含量较低。
Objective:To establish the distribution database of total selenium content from main commercial aquatic products and different tissues in Zhoushan so as to provide reference for the development of dietary selenium supplementation and selenium-rich aquatic deep processing.Methods:Microwave digestion hydride atomic fluorescence spectrometry was used to determine the total selenium content in 9 species of fresh water aquatic products and 11 species of commercial marine products in zhoushan.Results:The average total selenium content in seafood(0.361μg·g^-1)is significantly higher than that in freshwater aquatic products(0.139μg·g^-1).Total selenium content is closely related to aquatic species,individual size,feeding habits,growth environment and other factors.The content of selenium was higher in viscera and gills,but lower in scales and bones.
