不同性别拟穴青蟹肝胰腺和肌肉的营养组成比较研究 被引量:1

摘要 比较了不同性别拟穴青蟹“肉蟹”的肝胰腺指数、出肉率,并分析了肝胰腺和肌肉的常规生化、脂肪酸和氨基酸组成。结果显示:(1)雌蟹的肝胰腺指数显著高于雄蟹,但雌雄蟹的出肉率非常接近,无显著差异(P>0.05);(2)雌蟹肝胰腺和肌肉中的粗蛋白含量显著高于雄蟹(P<0.05),水分和脂肪含量低于雄蟹;(3)雌雄蟹之间肝胰腺和肌肉的脂肪酸组成差异较小,主要表现在雌蟹肝胰腺的C20:4n6和Σn-6PUFA含量显著低于雄蟹,n-3/n-6和DHA/EPA比值显著高于雄蟹(P<0.05);(4)雌蟹肝胰腺和肌肉的绝大多数氨基酸(16种)含量以及必需氨基酸总量ΣEAA、非必需氨基酸总量ΣNEAA和总氨基酸含量TAA均显著高于雄蟹(P<0.05)。整体上,不同性别拟穴青蟹“肉蟹”相比,雌蟹的肝胰腺含量较多,且其肝胰腺和肌肉均具有更好的营养价值。 The study compared the hepatopancreas index and meat yield of Scylla paramamosain"meat crab"of different genders,and analyzed the proximate composition,fatty acid and amino acid composition of hepatopancreas and muscle.The results showed that:(1)The hepatopancreas index of female crabs was significantly higher than that of male crabs,but the meat yield of female and male crabs was very close,with no significant difference(P>0.05);(2)The content of crude protein in hepatopancreas and muscles of female crabs was significantly higher than that of male crabs(P<0.05),and the contents of moisture and fat were lower than that of male crabs;(3)The fatty acid composition of hepatopancreas and muscle between male and female crabs was little different,which was mainly manifested in that the contents of C20:4n6 andΣn-6PUFA in hepatopancreas of female crabs were significantly lower than that of male crabs,and the ratio of n-3/n-6 and DHA/EPA was significantly higher than that of male crabs(P<0.05);(4)The contents of the vast majority of amino acids(16 types),the total amount of essential amino acids(ΣEAA),the total amount of non-essential amino acids(ΣNEAA)and the total amino acids(TAA)in hepatopancreas and muscle of female crabswere significantly higher than that of male crabs(P<0.05).On the whole,compared with the"meat crab"of different genders,the content of hepatopancreas of female crabs is more,and its hepatopancreas and muscle have better nutritional value.
