摘要
目的了解黄金蜜柚花蕾、花朵的香气成分差异,阐述黄金蜜柚柚花绽放过程香气成分的释放规律。方法采用固相微萃取结合气相色谱-质谱联用分析法(solid phase microextraction combined with gas chrom at ography-mass spectrometry,SPME-GCMS),对各成分质谱通过计算机谱库检索和资料分析,鉴定与比较分析黄金蜜柚花蕾和花朵的香气成分。结果花蕾和花朵香气中分别检测出18和17种物质;在花朵绽放过程中,香气物质总量增加,其中芳樟醇、吲哚美辛法尼酯和2-乙烯基-1,1-二甲基-3-亚甲基环己烷等物质大量释放;花蕾中烯烃类物质种类丰富,且相对含量也较高,在花朵绽放过程中,其相对含量明显降低。结论在对黄金蜜柚柚花的香味进行开发利用时,原材料应该选择盛开的花朵,黄金蜜柚花蕾可作为萜烯类化合物提取的原材料。
Objective To understand the difference of aroma components in flower bud and blooming flower of golden honey pomelo,and expound the release law of aroma components in the process of flower blooming of golden pomelo.Methods The aroma components of the flower buds and flowers of golden honey pomelo were identified and analyzed by computer spectrum library(NIST/Wiley)by using solid-phase microextraction combined with gas chromatography-mass spectrometry(GCMS).Results Eighteen and 17 substances were detected in flower bud and flower aroma respectively,linalool,indomethacin farneside and 2-vinyl-1,1-dimethyl-3-methylene cyclohexane were the main components in the flower of golden honey pomelo,which was released in a large amount in the process of flower blooming.In addition,there are kinds of terpenes in the flower bud,which decrease obviously during the blooming process.Conclusion The blooming flower should be used as the material to develop and utilize the fragrance of golden honey pomelo flower.Therefore,the flower bud of golden honey pomelo can be used as the raw material of terpene extraction.
