摘要
乳酸菌是自然界普遍存在的一种重要的益生菌,对人类健康有着诸多益处。人们已从各种发酵食品筛选分离出乳酸菌并进行鉴定,对其益生功能特性进行研究。作为益生菌,乳酸菌具有降低胆固醇、抗氧化、抑菌、耐药性、降亚硝酸盐作用等功能,具有良好的应用价值和开发前景。通过查阅、归纳和总结国内外关于乳酸菌的相关文献,对其概况、分离鉴定方法、益生功能和主要应用领域进行了综述,以期为乳酸菌的深入研究应用提供一定的理论基础及参考。
Lactic acid bacteria is an important probiotics that exists in the world of human and animal,and has many benefits to human health.Lactic acid bacteria have been screened from a variety of fermented foods and identified.As probiotics,lactic acid bacteria has the functions of lowering cholesterol,anti-oxidation,bacteriostasis,drug resistance and lowering nitrite,which have good application value and development prospect.This paper reviewed and summarized the literature on Lactobacillus at home and abroad,summarized the general situation,isolation and identification methods,probiotics and the main application fields,in order to provide a certain theoretical basis and reference for the in-depth study and application of lactic acid bacteria.
