摘要
为了明确燕山地区栽培核桃品种的果实品质,为当地核桃生产提供指导,以燕山核桃产区5个核桃主栽品种为试材,分别对其单果质量、坚果形状与大小、种壳特性等外观品质,以及风味、脂肪含量和蛋白质含量等内在品质进行了分析与评价。结果表明:香玲和清香坚果为长椭圆形,果顶尖,果底圆,青皮及种壳厚度小,出实率较高,且取仁极容易,脂肪含量高,但种仁较涩;石门核桃品种群中的魁香和硕丰坚果为近圆形,果顶和果底均较平,青皮和种壳均较厚,出实率较低,但种仁涩味轻;辽宁1号坚果为方圆形,果顶平,果底圆,青皮及种壳均较薄,取仁容易,种仁稍涩。香玲和清香适宜作为深加工产品;辽宁1号以及石门核桃品种群中的魁香和硕丰适宜带青皮销售或是直接食用种仁。
To make clear the fruit quality of main walnut cultivars in Yanshan Mountain,and provide guidance for walnut production,taking five main walnut cultivars as the materials,the single fruit weight,nut shape and size,seed shell properties,flavor,fat content and protein content were analyzed and evaluated.The results showed that the nut of Xiangling and Qingxiang were long ellipse,with copped apex and round bottom,small thickness of green pericarp and seed shell,high seed rateand high fat content,and the kernels were easy to be taken out,but the kernels were relatively astringent.Kuixiang and Shuofeng had nearly round nuts,flat top and bottom,thick green pericarp and seed shell,low seed yield rate and light astringent kernels.The fruit of Liaoning No.1 was square-round,with flat apex and round bottom,small thin green pericarp and seed shell,and it was easy to take out the kernels which was light astringent.Xiangling and Qingxiang were suitable for processing products.Kuixiang,Shuofeng and Liaoning No.1 were suitable for being sold with green pericarp or ate directly.
