摘要 冀紫439是河北省审定的第一个黑小麦品种,具有抑制2型糖尿病人餐后血糖升高水平的作用。为了明确冀紫439的营养品质,对其子粒的氨基酸含量和矿质元素含量进行了检测,并与普通高产类型品种科农199和优质类型品种藁优8901进行了比较。结果表明:冀紫439的16种氨基酸总含量为119.7g/kg,较科农199高29.0%,其中,半胱氨酸、丝氨酸和缬氨酸提高幅度较大,分别达到了75.9%、43.3%和32.3%;15种矿质元素总含量为2088.1 mg/kg,较藁优8901(1792.6 mg/kg)高16.5%。2个小麦品种除Mo和As含量均未检出外,其他13种矿质元素含量均为冀紫439高于藁优8901,其中,冀紫439的Ca、Fe、Zn、Ni和B相对含量高于藁优8901,而藁优8901的Mg相对含量高于冀紫439。冀紫439的Se含量虽然极低,但与藁优8901相比增幅却高达70.7%。冀紫439的氨基酸含量和矿质元素含量高于科农199和藁优8901,具有更高的营养价值。 Jizi 439 was the first purple wheat variety released in Hebei Province.Previous reports indicated that consumption of Jizi 439 could result in significantly lower postprandial plasma glucose in diabetic subjects than white grain wheat varieties.In this study,the contents of 16 kinds of amino acid and 15 types mineral elements were tested in order to identify its nutritional value,comparing to high-yield variety Kenong 199 and high-quality variety Gaoyou 8901.The results showed that the total content of 16 kinds of amino acid of Jizi439 was 119.7 g/kg,which was 29.0%higher than that of Kenong 199.Among them,those of cysteine,serine and val ine were 75.9%,43.3%and32.3%higher than those in Kenong 199.The total con tents of 15 types of mineral elements of Jizi439 was 2088.1 mg/kg which was 16.5%more than Gaoyou 8901(1792.6 mg/kg).Except Mo and As were not detected in both the two varieties,the contents of other 13 mineral elements of Jizi 439 were higher than those of Gaoyou 8901.The relative contents of Ca,Fe,Zn,Ni and B in Jizi 439 were higher than those of Gaoyou 8901,while the relative content of Mg in Gaoyou 8901 was higher than Jizi439.Although the content of Se was very low,that of Jizi 439 was 70.7%higher than that of Gaoyou8901.Jizi 439 has higher contents of amino acids and mineral elements than Kenong 199 and Gaoyou 8901 respectively.So,Jizi 439 has more nutrient value.
