摘要
以福建省平和琯溪蜜柚为试验材料,研究琯溪蜜柚贮藏前经涂膜剂壳聚糖、海藻酸钠复合茶多酚、山梨酸钾处理的保鲜效果。蜜柚贮藏温度为(6±1)℃,贮藏期间测定腐烂率、好果率、可滴定酸含量、可溶性固形物含量等指标。结果表明:琯溪蜜柚在冷藏前经1.5%壳聚糖+0.1%茶多酚+0.15%山梨酸钾复合涂膜处理效果最佳,能有效保持琯溪蜜柚的好果率,减少水分损失,延缓可溶性固形物和可滴定酸含量下降,降低蜜柚汁胞粒化程度等。
Taking the Fujian Pinghe Guanxi honey pomelo as testing materials to study on the effect of film coating chitosan,sodium alginate adding tea-polyphenol and potassium sorbate.The storage temperature of honey pomelo is at(6±1)℃.During this storgae period,we test the decay rate,good fruit rate,titratable acid content.The results showed that before going to cold storage,Guanxi homey pomelo was coated with 1.5%chitosan+0.1%tea-polyphenol+0.15%potassium sorbate,which could get the best result.It could maintain the good fruit rate and reduce the water loss,the content of soluble solid and titratable acid was decreased,and the degree of granulation of grapefruit juice was decreased and so on.
