摘要
右旋糖酐酶是一类特异性降解右旋糖酐中α-1,6糖苷键的水解酶,在制糖行业防止右旋糖酐的生成、临床级别中低分子质量右旋糖酐的生产、防治龋齿等方面都有着重要的应用价值,因此近几年对右旋糖酐酶调控右旋糖酐分子质量方面的研究逐渐增多。文章综述了右旋糖酐的结构、应用,右旋糖酐酶的产生菌、结构、酶学性质及对右旋糖酐的调控研究进展,并对未来的右旋糖酐酶研究趋势提出了见解。
Dextranase is a kind of hydrolase that specifically degrades theα-1,6 glycosidic bond of dextran.It has important application values in preventing the formation of dextran in the sugar industry,the production of low molecular weight dextran in clinical grade,and the prevention and treatment of dental caries.Therefore,in recent years,research on molecular weight regulation of dextranase and dextran has gradually increased.This paper reviews the structure and application of dextran,the development of dextranase,its structure,enzymatic properties and regulation of dextran,and provides insights into the future research trend of dextranase.
