摘要
以贮藏期的玉露香梨为研究对象,探究0、20、40、60 mg/m^3的臭氧对玉露香梨各项品质指标的影响。结果表明,对贮藏期的玉露香梨通入臭氧能够防止果皮的褐化,有效增加可溶性固形物和可滴定酸的积累,维持一定的酸甜比,降低多酚氧化酶(PPO)活性,加强过氧化物酶(POD)活性;但同时造成了抗坏血酸被氧化,破坏了部分营养成分。综合各项因素得出,在贮藏期向玉露香梨中通入20 mg/m^3的臭氧可以有效保持其商品性。
In this study,Yuluxiang pears was taken as the research object in storage period.Effect of different concentrations of ozone treatments(0,20,40,60 mg/m^3)on quality of Yuluxiang pears was studied.The results showed that introducing ozone into Yuluxiang pear during storage could prevent browning of peel,effectively increase accumulation of soluble solid and titratable acid,maintain a certain sour-sweet ratio,reduce PPO activity and strengthen POD activity.At the same time,introducing ozone into Yuluxiang pear during storage caused oxidation of ascorbic acid,and destroyed some nutrients.Based on the comprehensive analysis of various factors,it is concluded that 20 mg/m^3 of ozone can effectively maintain the commercial quality of Yuluxiang pear during storage.
