摘要
该文利用多组光谱和扫描电镜数据,结合光谱学、食品学、材料学方向内容,以期详细分析出“四大家鱼”鱼骨钙的组成形式。首先通过红外光谱、扫描电镜和X射线光电子能谱分析得出,4种鱼骨的钙盐主要以结晶的磷灰石和无定形CaHPO 4的形式存在,而磷灰石又包括羟基磷灰石和碳酸磷灰石。然后根据X射线光电子能谱中Ca/P和拉曼光谱中PO 3-4/CO 2-3比值,计算得出3种钙盐的含量,其中羟基磷灰石质量分数为青鱼51.18%、草鱼46.72%、鲢鱼28.49%、鳙鱼29.31%;碳酸磷灰石质量分数为青鱼9.89%、草鱼10.61%、鲢鱼8.60%、鳙鱼9.72%;无定形CaHPO 4质量分数为青鱼38.93%、草鱼42.67%、鲢鱼62.91%、鳙鱼60.97%。最后根据X射线光电子能谱的窄谱扫描和X射线衍射的物相检索数据,计算出羟基磷灰石和碳酸磷灰石中OH-被其他元素取代的种类及含量。这些结果可以为“四大家鱼”中鱼骨钙的综合利用提供一定的理论依据。
Combined with the content of spectroscopy,food science and materials science,spectroscopy protocols and scanning electron microscope were used to analyze the composition of calcium in fish bones of"Four Major Chinese Carps"in detail.The calcium salts of the four fish bones mainly existed in the form of crystalline apatites(hydroxyapatite and carbonate apatite)and amorphous CaHPO 4,as determined by infrared spectroscopy,scanning electron microscopy,and X-ray photoelectron spectroscopy.Then,based on the Ca/P ratio in the X-ray photoelectron spectroscopy and the PO 3-4/CO 2-3 ratio in the Raman spectrum,the content of three calcium salts was calculated.The hydroxyapatite content of fish bones in black carp(Mylopharyngodon piceus),grass carp(Ctenopharyngodon idellus),silver carp(Hypophthalmichthys molitrix),bighead carp(Hypophthalmichthys nobilis)was 51.18%,46.72%,28.49%and 29.31%,respectively.The carbonate apatite contents of fish bones were 9.89%(black carp),10.61%(grass carp),8.60%(silver carp)and 9.72%(bighead carp),respectively.The content of amorphous CaHPO 4 was 38.93%(black carp),42.67%(grass carp),62.91%(silver carp)and 60.97%(bighead carp),respectively.Moreover,the contents of OH-substituted by other elements in hydroxyapatite and carbonate apatite were calculated based on narrow-spectrum scanning of X-ray photoelectron spectroscopy and X-ray diffraction phase retrieval.These results may provide theoretical basis for the comprehensive utilization of fish bone calcium in“Four Major Chinese Carps”.
