分子生物技术在果汁鉴伪中应用的研究现状 被引量:8

摘要 果汁以其较高的营养价值和良好的口感颇受广大人民群众的喜爱,具有巨大的市场前景,使得各大食品企业纷纷投入果汁生产。为提高企业利益,一些商家不顾消费者身体健康和权益,掺入虚假或低廉原料来降低生产成本,严重扰乱了市场秩序。通过对近年研究的分析,该文阐述了果汁掺假方式及现有标准技术,综合考虑现代生物技术在产品原料及特性成分检测中的优势,着重对分子生物学方法在果汁鉴伪中的应用进展进行总结,包括聚合酶链式反应(PCR)、实时荧光PCR(RT-PCR)、数字PCR(dPCR)、环介导等温扩增(LAMP)技术、脱氧核糖核酸(DNA)条形码技术、代谢组学等,以期为果汁饮料的鉴伪提供参考。 Fruit juice is very popular with the broad of people due to its high nutritional value and good taste,and has a huge market prospect,which makes all kinds of food enterprises put into the production of fruit juice.In order to improve the interests of enterprises,some enterprises regardless of the health and rights of consumers mixed false or low-cost raw materials to reduce production costs,which seriously disrupts the market order.In this paper,the methods of adulteration of fruit juice and the existing standard technology were described.Considering the advantages of modern biotechnology in the detection of raw materials and characteristic components of products,the application progress of molecular biological methods in fruit juice identification was summarized,including polymerase chain reaction(PCR),real-time fluorescent PCR,digital PCR(dPCR),loop-mediated isothermal amplification(LAMP)technology,deoxyribonucleic acid(DNA)barcode technology,metabonomic and so on,to provide a reference for the identification of fruit juice.
