摘要
鸡蛋是高性价比的畜产品,价格的不确定性会影响居民鸡蛋的日常消费。鉴于此,本文采用分位数回归方法和Heckman两阶段模型实证探讨城镇居民家庭鸡蛋价格承受能力以及在蛋价高位、品牌与普通鸡蛋价差小时的消费倾向。研究发现,购买普通鸡蛋的城镇居民家庭对普通鸡蛋价格的承受能力更强,而对品牌鸡蛋价格的承受能力,则是购买品牌鸡蛋的城镇居民家庭更强。当普通鸡蛋或品牌鸡蛋超过居民的承受能力时,约有一半家庭选择减少该种鸡蛋的消费量;当品牌与普通鸡蛋价差小时,人们会增加品牌鸡蛋的购买量替代普通鸡蛋消费,但仍会保持鸡蛋消费总量的平稳。家庭月均收入、高学历家庭以及平衡膳食等因素是影响城镇居民家庭鸡蛋价格承受能力以及在鸡蛋高位、品牌与普通鸡蛋价差小时的消费倾向的关键因素。基于此,本文提出稳定鸡蛋市场以及鸡蛋合理定价的对策建议。
Eggs are cost-effective livestock products,and the price uncertainty will affect the daily consumption of eggs by residents.In view of this,this paper uses the quantile regression method and Heckman’s two-stage model to empirically explore the affordability of egg prices for urban households and their consumption propensities at high egg prices,or when the price difference between brands and ordinary eggs is small.The study found that urban households buying ordinary eggs are more able to withstand the price of ordinary eggs,while urban households buying branded eggs are more able to afford branded eggs.When ordinary eggs or branded eggs exceed their tolerance,about half of households choose to reduce the consumption of that type of egg.When the price difference between the brand and ordinary eggs is small,people will increase the purchase of brand eggs to replace the consumption of ordinary eggs,but the total egg consumption will remain stable.Factors such as average monthly household income,highly educated families,and balanced meals are the key factors that affect the affordability of egg prices for urban households and their propensity to consume eggs at high levels when the price difference between brands and ordinary eggs is small.Based on this,countermeasures are proposed to stabilize the egg market and the reasonable pricing of eggs.
