摘要 “水产食品加工学”是培养海洋食品加工专业技术人才的核心专业课程,然而其主流教学手段是利用多媒体进行课堂面对面教学,学生处于被动学习的状态,学习效率低下。基于翻转课堂的线上+线下混合式教学是信息化时代催生的新型教育方法,其既具有慕课教学的优点(学习的灵活性和主动性),又具有面对面教学的优点(知识的系统性),是提高教学效率的有效手段。以“水产食品加工学”为课程载体,通过优化在线教育资源,提升教师课堂组织能力及备课能力,完善考核评价体系,建立基于翻转课堂的“水产食品加工学”课程混合教学体系,以期为海洋特色农林工科专业课程的混合教学提供理论参考,为培养食品企业需要的高素质技能型人才提供支撑。 Aquatic Food Processing is a core professional course for cultivating technical personnel in marine food processing.However,its mainstream teaching means is face-to-face classroom teaching by using multimedia.Students are in a state of passive learning,with low learning efficiency.Blended online plus offline teaching based on flipped classroom is a new education method spawned in the information age.It has the advantages of MOOC teaching(flexibility and initiative in learning)and face-to-face teaching(systematic knowledge),and is an effective means to improve teaching efficiency.Taking Aquatic Food Processing science as the course carrier,by improving teachers'classroom organization and lesson preparation ability,optimizing online educational resources,perfecting the assessment and evaluation system,a mixed teaching system of Aquatic Food Processing science based on flipped classroom was established in the present study.The aim is to provide theoretical reference for the mixed teaching of marine specialty agricultural and forestry engineering courses,and to provide support for the cultivation of high-quality technical and technical talents needed by food enterprises.
